In order to land on a planet, a ship must travel at the same speed, and in the same direction as, the planet.
To do this, the ship will follow the planet's orbital path, and then enter its gravity well.
Imagine, if you will, that each planet has a funnel sticking up from its center. that, in very basic terms, is the gravity well. The further down the funnel you go, the stronger the pull of gravity is.
By hovering above a planet, you are on the very edge of the funnel, which causes your ship to then be dragged at the same speed and in the same direction as the planet itself.
Typing grav will drop you a small distance into that funnel, which is then where you can land from.
Note that if you power off while above a planet, there is nothing to stop you from crashing onto that planet in a giant ball of flame.
To enter and leave the gravity well of a planet, type grav.
Note you will have to move away from the planet to completely leave.
